2 cups gluten free oat flour/amaranth flour
1/2 cup raw cane sugar
2 large apples
1/2 cup butter or coconut oil (melted)
3 organic egg
2 tbsp cinnamon
1/2 tsp baking soda
1/2 cup raisin
1- Preheat oven to 180 degrees celsius.
2- In a large bowl, beat the eggs, sugar, baking soda, and butter until it is creamy.
3- Add the flour and mix until it is all combined.
4- In another bowl chop the apples (i like keeping the skin, as it won’t be noticeable after cooking), and add the raisins.
5- Sprinkle the cinnamon on the apples & raisins toss them well.
6- Add the apples and raisin mixture on the wet mixture and make sure you toss thoroughly.
7- (optional) Add pieces of dark or white chocolate on top.
8-Bake them in silicon cupcake molds for about 20 min, or until it’s golden brown.
