Chocolate Framboise Cake

INGREDIENTS
  • 2 cups (400g) raw cane/sucanat sugar
  • 2/3 cup (80g) unsweetened cocoa powder sifted
  • 1 cup (120g) oat flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
WET INGREDIENTS
  • 1/2 cup (120g) coconut oil melted then cooled
  • 4 eggs room temperature
  • 1 tsp. McCormick vanilla
GARNISH
  • 1/2 cup of Framboise/Mixed berries (Frozen)

INSTRUCTIONS

  1. Sift together all dry ingredients.
  2. Melt butter and set aside to cool slightly.
  3. In a medium bowl, beat the eggs with the vanilla.
  4. Add in and gently stir dry ingredients.
  5. Pour the melted butter into brownie mixture and mix until just incorporated.
  6. Spread batter in a prepared 8-inch square pan
  7. Add the berries on top of the mixture
  8. Bake for 20-22 minutes at 175 degrees.
