Chocolate Framboise Cake
- 2 cups (400g) raw cane/sucanat sugar
- 2/3 cup (80g) unsweetened cocoa powder sifted
- 1 cup (120g) oat flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/2 cup (120g) coconut oil melted then cooled
- 4 eggs room temperature
- 1 tsp. McCormick vanilla
- 1/2 cup of Framboise/Mixed berries (Frozen)
Sift together all dry ingredients.
Melt butter and set aside to cool slightly.
In a medium bowl, beat the eggs with the vanilla.
Add in and gently stir dry ingredients.
Pour the melted butter into brownie mixture and mix until just incorporated.
Spread batter in a prepared 8-inch square pan
Add the berries on top of the mixture
Bake for 20-22 minutes at 175 degrees.
