1 1/2 cups tapioca Flour (starch)
1/2 cup raw cane sugar
2/3 cup butter or coconut oil (melted)
1 organic egg
1 tsp vanilla powder
1/2 tsp baking soda
1/4 tsp sea salt
1- Preheat oven to 180 degrees celsius.
2- In a large bowl, beat the butter until it is creamy.
3- Continue beating by adding sugar, baking soda, and salt.
4- Add the egg and the vanilla, beat and combine.
5- Add the flour and mix until it is all combined.
6- Sprinkle some tapioca flour on the surface of the counter, and open your cookie dough carefully.
7- Use a small cup or cookie cutter to cut the cookies, then carefully transfer them to a parchment baking paper in a tray.
8- Space cookies few centimeters apart, then bake them for 10-12 minutes, until edges become lightly brown.
9- Allow cookies to cool before moving them to a serving dish.
